Pak Choi

Bok Choy

Pak Choi, also known as Bok Choy, is a type of Chinese cabbage with a dark green spoon shaped leaf at the top and a celery like shape at the bottom.

This nutrient dense, low calorie cruciferous vegetable should be a staple food in every culinary pharmacy. It is packed full of vitamins, minerals and phytonutrients which make it a cancer fighting antioxidant powerhouse.

Pak Choi is an excellent source of vitamins C, A, and K, calcium, magnesium, potassium, manganese, and iron.

Research shows Pak Choi can help to prevent cancer and is also a powerful anti-inflammatory.

Pak Choi can help prevent macular degeneration, aids in healthy skin and hair, lowers blood pressure and promotes bone and heart health.

Pak Choi’s powerful antioxidant properties support the immune system and the high folate content can assist a healthy pregnancy.

The entire plant can be eaten either raw in salads or it can be added to soups and stews or stir-frys. Pak Choi can also be lightly sauteed with garlic and a drizzle of lemon. Cooking Pak Choi will lower the vitamin C and A content.

This Superfood can become a probiotic powerhouse by fermenting it to make Kimchi.
