The ideal temperature for milk kefir is around 22 degrees celcius.
Milk kefir grains can still happily culture between 20 and 29 degrees celcius. They are not keen on ideal temperature swings.
Unfortunately few of us can afford climate control in our kitchens and some of us live in areas when one day it can be 19 degrees celcius and the next 32 degress celcius. So we need a quick plan to account for these extreme temperatures!
