Going on holiday or need to take a break from making milk kefir?
Recommended ways you can store milk kefir grains safely:
Short break for up to 3 weeks
You can store your milk kefir grains safely in the fridge for up to 3 weeks.
Although your milk kefir grains will continue to ferment, the cold temperature in the fridge will greatly reduce the culturing process.
Place your milk kefir grains in a jar of fresh milk and screw on the lid. The amount of milk you use will depend on the size of your grains and how long you need to store them. The longer the storage period the more milk you will need to keep them adequately nourished. (Work on approximately double the amount of milk you usually use for your kefir per week).
Making kefir again
Take your jar of kefir out of the fridge and unscrew the lid.
Remove the kefir grains from the jar of milk in which they have been stored and throw away the storage milk.
Place in a jar of fresh milk, cover with a coffee filter or muslin cloth and secure with an elastic band.
Leave on the counter top to ferment for 24 hours.
It may take 2 to 3 batches for your milk kefir grains to thaw out and get back up to speed.
If you need to take a break from making milk kefir for longer than 3 weeks or you have extra milk kefir grains you would like to store as a backup then you can dehydrate or dry your milk kefir grains and store in the fridge for up to 6 months. Follow instructions on drying milk kefir grains here.
